Okay, now we're talking!!! Here is the word you have been waiting for, let's talk about food. As we all know, food and what we eat plays a big part in our overall wellness, as do most of the words I have written about in my blogs. Your thoughts, frame of mind, mood, attitude... all contribute to your overall wellness. Who you are, how you think, where you come from, contribute to habits we acquire in our lifetime, so all these different aspects of our lives we need to be aware of and connected to. Once we begin to put our lives together into something that makes sense to us and those around us, then we can look at the foods we eat.


Making changes to our diets and being serious about what we put into our bodies, needs to be done when we feel some peace and connection with ourselves. When we are able to understand why food is important to our health and well being, nourishment for our bodies and fuel for our organs. Food is so much more than a loaf of bread, or an apple, or that delicious macaroni and cheese. It isn't just about the flavor or what sounds good, or being so hungry that anything will do, it is being conscious about what this food will do for us or to us. What I work on with my clients is, making a change that will make a difference in their lives and lifestyle. Foods that will work for them and with them, foods that will make a difference in their thinking, their moods, their energy, their way of life.


Now stay with me on this, it is not about any set diet, or eating routine, and I know there are some that need something like this to get a start on changing things for the better. Meal plans can be done, recipes can be shared, but it is finding what works for each person based on their overall lifestyle. Because...this is a lifestyle!!!! I want to work on this next chapter in your life, you know the chapter that leads to that happy ending. It is up to you to write the book, I am just here to help with the editing, as in revising the content, organization and grammar, so this life of yours can be published and lived to its fullest!!! So, let's talk about food AND all the other things that go into making a happy, healthy lifestyle.


Green Garden Rice


Ingredients:

1 cup water

2 medium tomatillos, husks removed

½ cup packed arugula

½ cup packed cilantro leaves and stems

¼ yellow onion

2 cloves garlic, chopped

1 tsp himalayan salt

1 tbsp olive oil

1 cup jasmine white or brown rice


Directions:

Place water, tomatillos, arugula, cilantro, onion, garlic and salt in a food processor and process until smooth.

In a medium saute pan with a fitted lid, heat olive oil, add the rice and saute fkor about 3 minutes. Mix in the puree and bring to a boil. Reduce the heat to low, cover and simmer until rice is tender and liquid is almost absorbed. Remove from the heat and let stand for about 5 minutes with the lid on. Fluff the rice with a fork and serve.
