Open

Open yourself up, be open to all the possibilities that some your way. Don't always be so quick to say no or disregard things that may not seem to fit. Sometimes you never know until you give something a try, you might be surprised. Open mind, open heart!


A year and a half ago I was asked by my dear friends daughter if I would be available and/or open to watching her 5 month old daughter. She was going back to work part time, and wanted someone that she felt comfortable with and trusted. I was so happy she asked me and trusted me with her beautiful little bundle, I said yes. Thinking back now, was it a mistake?? Absolutely not!!!

I have enjoyed every minute I have been able to spend with her. Is child care listed under Savor Your Soul services, nope, you will not find it there. Will I be adding it to my list of services, nope, it's kind of a one time thing. Has is interfered with any of my Savor Your Soul work or commitments, well maybe a few times, but I was able to work things out. I never had to miss any work opportunities, and was able to work out any conflicts with scheduling. She has brought me such joy, filling my heart with so much love and fun. I am so happy I said yes, and the best bonus is now there is a baby brother, double the joy!!!


So open your mind and open your heart, things are in your control, and can work out just the way you would like them to. Set your priorities, go into things with your eyes wide open, being honest with yourself and those involved in the commitment, and you will be amazed at what you might receive in return. Be open to change, be open to better choices, be open to growth, be open to learning. Most important, be open to the possibility that things may not work out and that's okay too. You were open and sometimes that is the only way you will know whether something will be right for you, or will be a good fit. There are lessons to learn most of the time when something doesn't work out or fall a little short.


There are so many things out there for us to have, to be, to try, to experience... Be open. You never know what you might miss, or other opportunities that may present themselves by stepping out of the box a little bit or a lot. Open Open Open


Halibut with Sundried Tomatoes and capers


Paste:

1 tbsp olive oil

1 tbsp freshly chopped italian parsley

1 tsp lemon zest

¼ tsp salt

¼ tsp black pepper

4 skinless halibut fillets


Sauce:

1 tbsp olive oil

Juice of 1 lemon

2 tbsp chopped sundried tomatoes

2 tbsp capers

1 tbsp chopped fresh parsley

¼ tsp crushed red pepper flakes

¼ tsp salt


Directions:

In a small bowl whisk the paste ingredients.

Rub the halibut on all sides with the paste, cover and refrigerate for about 15-20 minutes.

In another bowl whisk together the sauce ingredients, set is aside at room temperature.

Heat the grill to medium high. Grill the halibut about 8-10 minutes turning once during that time. Remove from the grill and serve with sauce spooned on top of each fillet. I added some Kalmata Olives to make it a little Mediterranean!
