Self, is a person's essential being that distinguishes them from others, the object of introspection or reflexive action. Self definition, one's individuality and one's role in life, a person's nature, character, personal interest... What I have found with self, is that many people lose their sense of self for many reasons. The difficult part is finding it again, knowing how to start or where to start, what they are looking for and HOW to find it. Without this connection it is difficult to be yourself, finding and knowing your individuality. So many things have gotten in the way over the years, and if you have been disconnected for too long, then it is really hard to find your way back.
Take it from personal experience, sometime after having kids and moving into the role of wife and mother, doing the right things and making the right decisions for everyone else, I strayed from my sense of self. I realized that without self, it was difficult to be what was most important in my life, ME. If I wasn't me then how could I be anything to those I love??? Once I realized who I was, what I needed, my desires, my goals, my dreams and most important loving myself, moving forward in life was so much easier. It isn't enough to just know yourself you need to BE yourself!!! Live it, embrace it, make the changes or shifts necessary to be everything you can to yourself, true happiness will follow.
This is my goal with each one of my clients, listening and learning, assisting them in finding their true self, their individuality, that person they feel they lost but really just got disconnected from. Because, that person has always been inside, it just takes reconnection. Once this is accomplished, then we can move on to living your best and happiest life. Taking care of your SELF through what you do, choices you make, what you eat. Making life simple, simplicity is what we all need in our lives, let me help you create a simple life for yourself. Simple doesn't mean boring, unless that is what you are looking for, it just means removing the struggle, the overwhelming feelings, being or feeling the victim, the defeat, the negativity. Food is another way to self discovery, I know, it sounds silly but, we are what we eat!!! The foods we consume can have so much influence on who we are and how we feel. Your health physically and mentally is a big part of self, your self esteem, self worth and self aware. Mental clarity, physical movement, health, your bodies ability to do all the things that are important o you, LONGEVITY!! My kids are taking a heck of a long time to start their own families, and I want to be around as long as I can be to see and experience as much of it as I can. Let's do this together, finding SELF and being your true authentic SELF, and living in simplicity, having simple abundance, How better to you live your life purpose, in self?!

Spicy Kale and Potato Salad
Ingredients:
Potatoes
1 lb yellow potatoes, cut into bite size pieces
½ red onion, diced
1 jalapeno, diced
1 bell pepper, diced
1 tbsp olive oil
½ tsp paprika
½ tsp chili powder
Salt and pepper to taste
Dressing
½ cup tahinii
2 tbsp red wine vinegar
2 tbsp dijon mustard
Juice of ½ lemon
1 tsp oregano
½ tsp garlic salt
Fresh ground black pepper to taste
Water (until you get the consistency you want)
Salad
4 cup of kale, stems removed and chopped
Juice of ½ lemon
Directions:
Preheat oven to 425 degrees
In a large bowl combine the potatoes, bell pepper, jalapeno, red onion, olive oil, paprika, and the chili powder. Stir until well coated. Spread the mixture out on a parchment lined cooking sheet and salt and pepper to taste. Cook in the oven for 20 minutes, remove from the oven and stir to flip the potatoes. Place bac into the oven and bake for an additional 10-20 minutes, until potatoes are done.
While the potato mixture is cooking, in a medium bowl whisk together the dressing ingredients, add the water until you get desired consistency.
Place chopped kale in a bowl and squeeze ½ the lemon on the kale and massage the kale and lemon to soften up the kale. Assemble the bowls with kale first, then the potato mixture, drizzle the dressing over the top.
Shrimp Burrito Bowl
Cilantro lime rice:
4 cups cooked brown or tricolor rice
Juice of 2 limes
¼ cup chopped cilantro
½ tsp salt
Cook rice according to package instructions. Once done mix the rice with the lime, cilantro and salt.
Salsa
½ red onion diced
1 can black beans or your homemade black beans (2 cups)
1 cup diced tomatoes
Juice of 1 lime
½ tsp garlic powder
Stir all ingredients in a medium bowl until well combined.
Shrimp
2 ½ tsp chili powder
2 ½ tsp cumin
½ tsp garlic powder
½ tsp cayenne pepper
1 ½ lb raw shrimp, peeled and deveined
In a large skillet heat 1 tbsp coconut oil, add shrimp and sprinkle the spice mixture over the shrimp and stir. Cook shrimp until cooked through about 3-5 minutes.
In a serving bowl put rice on bottom, next the corn salsa then the shrimp top with avocado and topping of choice (cilantro, hot sauce, salsa…)
