Making decisions and following through, showing up for yourself when it matters most, taking that leap of faith (faith you must have when following through on a decision), trust in the unknown (instead of fear of the unknown). Now I am talking about positive decisions you have made about yourself, your family, your lifestyle, decisions made for positive changes in your life. It takes all these qualities we have within ourselves to follow through on the decisions we make. Making them is the easy part, making them happen can be more difficult. It is the change we fear, self doubt we hold on to, I will do it tomorrow (tomorrow doesn't count, it isn't here yet). Instead of battling with yourself over decisions and changes you want to make in your life, let it happen, you wouldn't have made the decision in the first place if it wasn't something that was important to you. Follow your heart and get out of your head!

Lemon Ricotta Pancakes
1 ½ cups all purpose or same measurement of almond flour or gluten free flour
1 tbsp baking powder
3 tbsp maple syrup
1 ½ tsp salt
¾ cup almond milk (or regular milk if dairy is okay for you)
½ cup ricotta cheese ( if non dairy then leave ricotta out and just make lemon pancakes)
2 eggs
1 tsp pure vanilla extract
2 tbsp fresh lemon juice
1 tbsp fresh lemon zest
2 tbsp coconut oil for cooking
Directions:
In a large bowl whisk together flour, baking powder, and salt.
In a medium size bowl whisk together maple syrup, almond milk and ricotta until well blended, then add the eggs 1 at a time whisking in between. Then add the vanilla, lemon juice and zest and whisk until all ingredients are well blended.
Make a well in the center of the bowl with the dry ingredients, pour wet ingredients in the well and fold gently just until well combined, do not overmix ( you might get tough pancakes)
Heat coconut oil on griddle to medium high and pour about 1 cup batter onto the griddle or skillet. When batter starts to bubble flip the pancakes, cook until golden brown about 1-2 minutes per side.
