I was talking to my sister the other day and we were discussing "SAME", how it seems now more than ever that everyone wants to be the same. Same opinions, same views, same conversations, same religions, same politically...How boring would our world be if we were all the "SAME". So this brings me to what I want to talk about and that is "DIFFERENT", different is what makes things interesting!!!! Different is one of the things that makes this world so interesting, it is what helps us grow, evolve, learn. Different challenges us, it challenges our thoughts, our opinions, our actions. Being different is unique and fun, who wants a world where everyone looks alike, dresses alike, talks alike, no thank you!!!


Different should also show up in your life every day, by doing different things, going different places, eating different foods, listening to different music, hanging with different friends. Try to do at least one different thing a day, there are so many choices out there, all around you. Now this is all coming from a person who is such a creature of habit, but most of those things that are habit for me don't necessarily have to change. Habits like who I have to cut my hair, stores I like to shop for my groceries (I have a few to choose from), the time I like to leave the house for my long dog walk. These are just some examples of certain habits I have that make my day and world run a little smoother, and that I find comfort in. The friends I choose to have close to me and around me, we do have similarities, this is what makes us feel connected, but it is our differences that bring so much to my life. Each friend or person I am around gives my soul something different, they help me thrive in a world that can be difficult to navigate a lot of the time. For these differences I am grateful!


One of the things that I try to help my clients understand is to embrace different, make different, thrive with different, grow with different. Make life interesting by being different and making different choices for yourself, bring different into your life, open your heart to different. Different to me makes the world go round. Don't be afraid to be different, or make different choices, as long as they are good for you and those around you. Dare to be different!!!


Lemon Arugula and Artichoke Pizza


Ingredients:

Pizza dough for crust ( always more fun and taste better if you can shape your own pizza) I can be your own dough or a store bought one you love.

1/4 cup pesto (homemade or store bought)

1/4 cup marinara (homemade or store bought)

2 handfuls of baby spinach (enough to cover pizza crust)

1 can artichoke hearts, quartered

Juice of 1/2 lemon

2 tsp lemon zest

Large pinch of crushed red pepper flakes

2 tbsp extra virgin olive oil

Himalayan salt and fresh ground black pepper

2 cups baby arugula

1/2 cup fresh basil leaves, roughly chopped

1 tbsp fresh chopped dill

8 oz burrata cheese (can be made dairy free without the cheese)


Instructions:


1. Preheat the oven to 450 degrees F. Grease a large baking sheet or pizza panwith olive

oil

2.On a lightly floured surface, push/roll the pizza dough out until into a 10-12 inch circle.

transfer the dough to tprepared baking sheet

3.Combine the pesto and marinara, mix well. Spread onto the pizza dough covering the

top. Add the spinach and artichoke hearts on top of the sauce and cover evenly, drizzle 1

Tbsp olive oil over the pizza. Transfer to the oven and bake for 10-15 minutes or until the

crust is golden. .

4.Meanwhile, in a medium bowl, whisk together the 1 tbsp. olive oil, lemon zest, lemon

juice, and a pinch each of salt, pepper, and crushed red pepper. Add the arugula, basil,

dill and toss to combine.

5.Remove the pizza from the oven and top with burrata spreading dollops over the pizza.

Allow the burrata to sit on the pizza and warm through, about 5 minutes. Top with the

tossed arugula, slice and serve.
