Energy

Find the energy of your soul!!! There are so many parts to this thought, and so many ways to find that energy. The most important part of this thought is knowing yourself, knowing what feeds you, knowing what makes you whole. There is growth in the process of finding the energy of your soul, it also helps to have some idea of where to begin. Being present with yourself, giving yourself time, connecting with your thoughts and words. Also in the things you do and the choices you make, how you take care of yourself inside and out.

I know you have heard this all before, but the food you eat is so important to your overall well being, exercise your body and your mind, slow down and meditate. All these parts will help you know your body, connecting your mind to your body, allowing the space you need to feel whole.

Keep yourself clean, clear and with the mindset you need to start this journey of finding this energy of your soul. What a wonderful connection it can be to live your life with this knowing and understanding of you and all that is in your life. I would love to help you get there!!!


Salmon Avocado Rice Bowl


Ingredients:

Rice

2 cups cooked rice

Juice of ½ lime

1 tbsp honey or agave nectar

2 tbsp chopped cilantro

3 tbsp vegetable stock

Salmon

1 lb salmon

Juice of ½ lime

1 tbsp honey or agave nectar

2 tbsp fresh chopped cilantro

Salt to taste

Avocado 

1 ripe avocado

Juice of ½ lime

1 tbsp chopped cilantro

¼ tsp chili powder

Salt to taste


Directions:

Rice

In a small bowl whisk together the stock, lime juice, honey, and citantro.

Pour mixture into a preheated pan and let it heat for about a minute, remove from the heat and add the rice.  Stir until well combined.

Salmon

Heat grill to medium high.

Place salmon, skin side down, onto a parchment paper lined piece of foil, curl up the sides so marinade doesn’t spill out. Season salmon with salt and pepper, then pour a little olive oil over the top.

Combine lime juice, honey and cilantro, pour this mixture over the top of the salmon.

Place the salmon in parchment foil packet on the grill and cook until salmon is flaky

Avocado

Cut avocado in half and remove the seed and skin, cut avocado into little squares into a bowl.  Add the lime juice, cilantro and chili powder, salt to taste.

To serve, place the rice on the bottom, salmon on top of the rice and spoon avocado mixture on top of salmon.  Add a vegetable of choice.
