Grace

Grace at mealtime isn't always about the prayer you say giving thanks for the food you are about to eat, it is also about eating consciously. I read a beautiful saying not long ago, "Grace is the institutionalization of eating consciously." This is definitely food for thought?!?! We should all be more conscious and aware at mealtime or anytime you are eating, what it is you are consuming, how and if your body needs it, how and where you are eating!! Whether sharing a meal with friends and family, or just enjoying it alone, just make it a conscious habit.


Life isn't just about food, although for me it is a big part of my life, but when it comes to food you eat, make it important. For me there is nothing more rewarding than putting a delicious meal together for the people I love. Being present in the kitchen is where you can reclaim yourself, there is something built in the labor of cooking that will allow you to eat better. Try to take more responsibility for your food and meals, be a part of them, put some time and thought into what you eat. You and your loved ones will reap the benefits, life will be so much more rewarding when you feel good, think more clearly, have more energy and enjoy what you are eating.


Find grace at mealtime, in food preparation, even in selecting the foods you buy. The message is doing these things consciously, being in a space of awareness, eating with grace, saying grace and sitting with grace. Savor the grace at mealtime!


Mexican Skillet with Cauliflower Rice


1 lb ground turkey

2 tbsp olive oil

½ yellow onion, diced

1 tsp ground cumin

1 tsp chili powder

1 tsp smoked paprika

2 diced tomatoes, or 1 can diced tomatoes

15 oz black beans, drained

12 oz cauliflower rice

Salt and fresh ground black pepper to taste

1 bunch cilantro

1 avocado

1 sliced green onion for garnish


Directions:


Heat oil in a large skillet, cook the ground turkey, onion and seasoning together until turkey is browned, about 10 minutes.


Stir in the tomatoes, black beans and cauliflower rice, and simmer for another 10 minutes.


Turn off the heat and add the cilantro, salt and pepper to taste and stir well to combine.


Garnish with green onion and avocado.
