Grateful Living

Wow, I can't believe it is November already!! I thought this a good time to talk about gratitude, with thanksgiving just around the corner and all that is going on in our country. When you stop to think about all the things we have in our lives to be grateful for, most important is life itself. We have been given this one life right now to live to its fullest, taking care of every part of ourselves, living in gratitude for all that we are. We are amazing beings with amazing bodies, bodies that are able to accomplish so much in this lifetime.


Living a grateful life isn't about the things we have or our abundance monetarily, it is about gratitude for who you are and all the things that life bring to you in love, in connections, in being in your own power, kindness to self and others, expansion and acceptance of who you are and all that makes your world complete. You owe it to yourself to take care of who you are physically, mentally and spiritually. There are so many ways to accomplish self care and connection, it brings me such joy to share these ways with my clients. One important way is by nourishing you body inside and out, through food, physical activity and mental stimulation.


Our bodies are so powerful and strong, it is easy to neglect it because it steps in whenever we put it in overdrive, and for most of us that happens a lot. Without thinking we make choices that challenge our bodies and, time and again we make excuses, continuing our bad habits knowing that our bodies will step in and help us recover. But, why do we challenge our bodies so often, why put ourselves through this excessive work and effort??? Just think how efficient we would be if we nourished ourselves with love and food that feeds our bodies and our brains, why make it work harder than it needs to. Live in gratitude for how blessed we are to be given this body and human experience, making the most of what we have and what we can do. Keeping the gratitude within ourselves, and living a life that is nurturing, loving, connected to life and all that it brings. Savor your life, and live win gratitude!!


Spicy Chicken and Rice


Ingredients:

2 tbsp extra virgin olive oil

1 lb boneless skinless chicken breast, cut in bite size chunks

½ tsp salt

¼ tsp fresh ground pepper

½ yellow onion, chopped

1 cup sliced mushrooms

1 red bell pepper, diced

4 cloves garlic, minced

½ cup brown rice

1 ½ cp chicken broth

2 tbsp coconut aminos

½ tsp cayenne pepper

3 tbsp fresh basil, chopped


Directions:

In a large skillet heat the olive oil on medium high. Season chicken with salt and pepper and cook in  the heated oil stirring a few times until almost cooked through.

Add the onions and cook until onions start to soften, about 2 minutes.

Add the mushrooms, peppers and garlic and cook until peppers are crisp and tender, about 3 minutes.

Mix in the rice, broth, coconut aminos, and cayenne pepper, bring to boil.  Then reduce the heat, cover and simmer until liquid is absorbed and rice is tender, about 25 minutes.

Remove from the heat, and let stand covered another 10 minutes, allowing the rice to further absorb any liquid.  Fluff with a fork and stir in the basil.
