I know you have heard it time and time again "eat your greens", better yet when making salads the best way to go is eating dark leafy greens! Why? Because they are rich in nutrients, considered "Nutrient dense" (nutrients per calorie) not that I want you counting calories by any means. This just means that for the low calorie count leafy greens carry, they hold a lot of nutrients "noncaloric food facts" or micronutrients including vitamins, minerals, fiber and Phytochemicals. Some foods contain a lot of calories but few to no nutrients whatsoever, this is why whenever possible you need to make every calorie count (this is what I mean by counting calories)!! We need to get an adequate amount and diversity of micronutrients from our food every day.
Greens are packed with fiber, protein, and antioxidants as well as a long list of vitamins, minerals, and disease fighting phytochemicals. There are so many ways to prepare your greens, I am going to share a salad recipe that is both filling and healthy.
Feed your body, feed your soul.
Lime Cilantro Salad
Dark leafy greens of choice, brown rice, black beans, cucumber, tomato, bell pepper (any color), celery, purple onion and avocado (or any other veggies of choice).
Dressing-
1 cup cilantro
¼ cup fresh lime juice
¼ olive oil
½ Jalapeno seeded
2-4 garlic cloves
Salt and pepper to taste
Mix dressing ingredients in a food processor.
