Intention~ A thing intended; an aim or plan. A persons design.
This is my word for 2021!!! Each year instead of a New Years resolution, or goal, or many goals, I choose a word that resonates with me, and that is the word I try to live by or with through the new year. Last year my word was GRACE, and I can honestly say that I lived pretty close to that, especially with what 2020 handed to us! I heard a quote the other day which brought me back to my words for each year, the quote was "Life isn't about WHAT you want to do with your life, it's about WHO you want to be". Each word I choose reminds me of what is important in my life, and how I want to live it. I don't want to change who I am but I can certainly grow each year into the woman I want to be. The last part of this definition resonates the most with me, living with intention will definitely help me find my own personal design.
We would all benefit more if we lived our lives with intention, making decisions based on our intentions, creating based on intentions, loving with intention. Intention gives us our why and what for, it helps guide us in the direction we want to go, it helps us think before we leap. Sometimes leaping first can be fun, but once we land that's where our intention comes in "why in the ______ did I do that". We all want to know what we are aiming for and what the plan is, most plans we have control over but some plans we don't, intention helps us see our direction a little more clearly, and helps us understand some of the decisions we make.
Now, I am not saying that everyones word for the year should be INTENTION, I am just saying to live your life with more intention. With each big decision you make set an intention, you can take it one day at a time, one intention at a time, one week at a time, one month... Just be aware of your intentions, mindful of what it is that you want to do or accomplish, intention helps you stand by your decisions and understand your aim or plan. Make intention an every day for the rest of your life!! With each word I choose, I take it with me into the next year and every year that follows, but by choosing a word that I want to live by helps me practice living with that word, making it a habit and a way of life. It feeds and nourishes my soul, helping me evolve and grow into becoming the person I want to be!

Shrimp Burrito Bowl
Cilantro lime rice:
4 cups cooked brown or tricolor rice
Juice of 2 limes
¼ cup chopped cilantro
½ tsp salt
Cook rice according to package instructions. Once done mix the rice with the lime, cilantro and salt.
Corn Salsa (you can also make this without the corn)
2 cups corn frozen and thawed, of fresh from the kernel
½ red onion diced
1 can black beans or your homemade black beans (2 cups)
1 cup diced tomatoes
Juice of 1 lime
½ tsp garlic powder
Stir all ingredients in a medium bowl until well combined.
Shrimp
2 ½ tsp chili powder
2 ½ tsp cumin
½ tsp garlic powder
½ tsp cayenne pepper
1 ½ lb raw shrimp, peeled and deveined
In a large skillet heat 1 tbsp coconut oil, add shrimp and sprinkle the spice mixture over the shrimp and stir. Cook shrimp until cooked through about 3-5 minutes.
In a serving bowl put rice on bottom, next the corn salsa then the shrimp top with avocado and topping of choice (cilantro, hot sauce, salsa…)
