Invest

Invest- An act of devoting time, effort, or energy to a particular undertaking with the expectation of a worthwhile result. Yes, here I go with a definition, sometimes I like to look through the definitions of words when there are several meanings or interpretations to a certain word o phrase. The word invest has a few meanings, so this definition explains exactly what I am referring to. I wanted to discuss invest as in putting time, effort and energy into yourself. As I heard someone say the other day, put yourself at the front of the line, most women seldom do. When I say invest I mean go deep, put in the effort necessary to help you live the best version of yourself, your purpose above all is to live your best life, honestly and authentically.


Invest in yourself, with time, thought, energy, understanding and yes even financially. YOU are worth the investment, who better to receive your investment than you. You know what you want, where you want to go, how you want to feel, what you want to be...Be your biggest investor! It is not selfish to put your self at the from of the line, spending your time doing the things that will help you grow, growing into to being the person you can live with and be happy with.


It doesn't matter where you are in life, age, occupation, marital status, with children, without children, homeowner, renter... Just make the investment to create the best life you can, whatever that takes or looks like. You can change anything, shift anything, undo anything, this is your journey, God has given you this life and this opportunity to create your world, so invest what it takes to accomplish this world for yourself.


Another point to make with this investment, is the financial part to this. Whether it is classes for further education, paying for help with your business or your home, investing in your health whether it be a trainer or nutritionist, classes, yoga, lessons, you are worth the investment. Another very important part to this is a long term financial investment. I recently had this epiphany sitting with my husband doing our trust, I realized that I wanted to invest in myself so that 10,15 20 years form now I would have some security of my own. Very few women have given thought to investing in and for themselves. In all the years I have worked, I do not have a lot to show for it. Starting to invest now, gives me some security for the future and something to leave to my kids. INVEST in yourself. See your needs, see your value, see your goals, start now!!!


Chicken and Veggie Stir Fry


Ingredients:

Olive Oil, as much as needed for the stir fry

1/2 large red onion, sliced thin

1 red, yellow or orange bell pepper, thinly sliced

2 cups fresh green beans, trimmed

1 bunch fresh asparagus spears, trimmed

8 oz fresh mushrooms, sliced

2 cup broccoli florets

salt to taste

*2 boneless skinless chicken breasts, cut into chunks

*You can also make this without the chicken or add tofu cut into squares


Stri fry sauce:

2 tbsp cornstarch

2 tbsp coconut aminos or tamari

1 tbsp fresh ginger, grated

3 tbsp oyster sauce

1-3 cloves garlic, minced

serrano pepper or jalapeno pepper, sliced

1 cup chicken broth or veggie broth


Directions:

Prepare the sauce first, place all the ingredients into a small bowl and whisk unto the cornstarch is dissolved. Poor mixture into a saucepan an bring to light boil, when sauce gets darker and starts to thicken it is done. Leave saucier the pan until ready to add to the veggies and chicken.


In a skillet, stir fry each vegetable separately just until crisp adding some salt with each. When done with place each one in a large bowl together. Add more oil as needed.

Next, stir fry the chicken until cooked through. Add the chicken to the same bowl as the vegetables, stir to combine.

Pour the sauce over the top and toss until the sauce covers everything in the bowl.

Ready to be served!
