Following recipes can be a great way to cook and create in the kitchen, the hard part is done for you. Someone has already put together all the ingredients and the directions to follow so that you can put together a delicious dish. You go to the store buy all the ingredients, you take out the recipe and start the process- measuring, cutting, slicing, dicing, sautéing, roasting, baking all that it takes to prepare. You are done and you look at the finished product with pride, then you look at the picture they show and it doesn't quite look the same?! You wonder what you did wrong, how come the colors aren't as bright, you can't really tell what the ingredients are like the picture shows, your cook until it is golden is more like cooked until it is brown. Don't be discouraged, the picture was photoshopped for sure, my creations when following a recipe never turn out like the picture. As long is the flavor it there and you enjoy the dish that is the important thing. You can also take your recipe you are following to the next step and add ingredients or take them away. Don't be afraid to create your own, adding somethings that you think might change up the recipe a bit for you. Ingredients can be changed, seasonings can be changed, you can grill instead of roast. A recipe gives you a start, don't be afraid to make it your own! This recipe I am sharing I added mango and yellow bell pepper to it and took out the cilantro.


Cucumber Tomato Avocado Salad-

1lb tomatoes diced or one container cherry or grape cut in half,

1 English cucumber diced,

½ red onion sliced,

2 avocados diced,

2 tbsp olive oil,

juice of 1 lemon,

½ bunch cilantro chopped (optional),

salt and black pepper to taste. 

Place all veggies in a bowl and drizzle olive oil and lemon juice on top, toss gently to combine. Add salt and pepper to your own serving.
