Overwhelming...Possibilities

Overwhelming can happen, overwhelming moments, overwhelming days, overwhelming YEARS!!! We can take the overwhelming, and turn it into overwhelming possibilities that are so abundant in our lives. Whatever is happening that seems to be so great that you can't see past it, knowing that there are always other possibilities to choose or draw from, things aren't always how you see it or how it feels to you. It is how much you let each moment or situation get the best of you, and your reaction to them that can make them greater than they are. You can turn a negative into a positive most of the time, especially if you don't let things overwhelm you.


So many of us allow the holidays to overwhelm us, we know that they are gong to come every year, usually on or around the same dates, but we still can't believe they are here. Now I have to admit that this year flew by is a very peculiar way, but here we are November 29th 3 days after Thanksgiving and 25 days away from Christmas. So let's get to planning!!!! Start your shopping, what are you waiting for?? Plan your menus and your activities ahead of time, check your stock on foods or seasoning you already have, and what you need to buy. Some of your non perishables you can buy ahead of time when you are at the store buying your daily foods. If you are having a party beforehand then schedule your days leading up to it with things you need to get done. If your party is on a Saturday you can set your table or purchase your decorations on Wednesday. Thursday buy your food and spend a good part of Friday dong your prep. Being organized weeks in advance can help you tremendously and take a lot of the pressure off.


Feeling overwhelmed going into anything can only be counterproductive in trying to accomplish what you need, the mind can take you to so many places you don't need to go. Wasted energy and time! If you work part time or full time then delegate your to do list to those living with you, your husband, kids, family member that you are close to and that would love to help out. If it is a family get together then have them bring some dishes from the menu you have chosen. I personally do not like to have my guests bring food to a gathering that I am hosting, I want them to come as my guests, looking forward to an evening out without any work involved. Don't do anything or plan something that is going to cause you stress and overwhelm you, this takes the enjoyment out of it for you.


Do your best every holiday season to make it as zen as possible, don't over obligate yourself, try not to spread yourself too thin, and plan ahead. Make your lists, plan out your days leading up to the holiday, know what is comfortable for you and your limitations, we all have our limits. The point of this blog, is to know that when things start to become overwhelming, there are so many possibilities to change, change the moment, change our way of thinking, and choices we can make to redirect our thinking. Overwhelming can lead to giving up and we don't eat to do that?!?!


Enjoy your holidays and those you love, and remember, don't do more than you can handle!!!


Kale and Quinoa Bowl with Mango Salsa


Salad ingredients:

2 cups chopped kale

1 cup cooked quinoa

1 chopped tomato

1 cup black beans

1/2 cup diced cucumber

1 chopped red bell pepper


Mango Salsa ingredients:

3 cups chopped mango

1/3 cup diced red onion

1 jalapeno, seeds and ribs removed, and chopped

1 red bell pepper, cored seeded and finely diced

1/2 cup cilantro, chopped

juice of 1 lime

salt to taste


Directions:

Place mango, red onion, jalapeño, red bell pepper, and cilantro in a medium bowl.

Add lime juice and salt, and stir well to combine.


Separate salad ingredients into 4 bowls and top with the mango salsa.

*You can add extra lime juice to bowl or any other seasoning you like or hot sauce.
