One of the concerns for most of my clients and friends, probably most people is time, there never seems to be enough time. Time to do the things we want to do and need to do, time management can help, making the most of each day is the key. I read this morning a little phrase that said what helps to make the most of each day is to write an itinerary for the day. This isn't a to do list, this itinerary includes all the things you would like to do this day, work and play. We all need some fun on our itinerary for the day so be sure to include it. This itinerary also helps us to be more present with ourselves and this day we have been given, so let's make the most of it.
When it comes to meal prep and cooking, this can be very time-consuming for a lot of people. My suggestion to everyone is to find a prep day, it may not always be the same day depending on your schedule, for some it might help to make it the same day each week. Regardless, find a day that will give you a few hours to spend in the kitchen for food prep. Cutting vegetables, cleaning fruit, putting together a salad for the week, marinating meats to throw on the grill. Whatever you are planning on making for the week, a lot of the busy time consuming prep can be done on this prep day. There are cold dishes you can make that you can just grab and go, you can even cook your protein ahead of time and throw it in your salad or on top of roasted veggies. Salad dressings can be made ahead, double the recipe and store it in refrigerator. The best part is knowing that you have food at home already to go which should keep you from going out so much and making unhealthy choices because they are easy and fast. My other suggestion is to make this time enjoyable, put on some music, or if you are a TV watcher catch up on some shows while you prep. Pour yourself a glass of wine or make a refreshing drink and sip while you prep. Call a friend and chat or listen to a podcast while you prep, you might find that it can be a little therapeutic. Prep with your husband, a friend, a child, company is always fun and you can share the prep work. This prep day will help make your life so much easier and so much healthier!! Vegetable Chickpea Salad
1 15 oz can of chickpeas, drained and rinsed
2 green onions chopped
1-2 stalks of celery chopped
1 shredded carrot
1/4 cup chopped red bell pepper
1/4 cup chopped dill pickle
2 tbsp mayo (homemade, vegan, avocado oil) or you can leave this out if you are not a fan
2 tsp dijon mustard
1 tsp yellow mustard
1/8 tsp dried dill
1/8 tsp salt and pepper
Directions:
Drain and rinse the chickpeas and then place them in a food processor and pulse until they are mashed (or you can mash them by hand)
Chop your vegetables and put them in a bowl with the mashed chickpeas.
Add the mayo, mustards and seasonings and stir until well combined.
