Reluctance...something we all have felt at sometime in our lives. to be hesitant about doing something or making a decision about something, unsure, skeptical... A word defining a feeling we might have about something, a feeling brought on by fear and/or the unknown. This seems to be an emotion that is considered "negative", through my experience reluctance is not negative, being reluctant to do something you do not want to do, should signal to you to look a little deeper into why you feel this way, especially when it is something that is good for you. A change to be made, a task to take on, a decision to make, let this be the time to look deeper into yourself, to find out what is causing you to feel this way???
Sometimes there is that decision to do something, change something, to start something new, give up something?! What brought you to this place or decision, and why are you feeling hesitant or reluctant to do it. Research, do your homework, ask questions, to better understand whether or not your reluctance has merit or if it is just about your fears and the unknown. A better understanding of what is involved, what you will need to do, and /or the part you will have to play in the situation you are feeling reluctant about. My best example of this would be, people I talk to who want to make a healthy change to their lives and lifestyles, but, based on the unknown or their own conclusions they have come up with, they are reluctant to start making those changes. I encourage them to talk to me, to truly understand exactly what we will do together, what we can accomplish together, and how this can change theirs lives for the better. Still enjoying life and all the things they love about their lives, just living it better.
If it is good for you, will improve your life, will keep you healthy, will keep you happy... then don't stand in reluctance, move through it and be better because of it. Eat better, live better, love better and know better. There is reason you are there, a reason you have made the decision, or are being faced with the challenge of change. Leave the fear, let go of the unknown, walk in the education and the knowing with a lot of wisdom thrown in. What is in your heart, what is it saying to you, wisdom and knowledge work together here to help you create something beautiful for yourself. So let's start creating, no more reluctance, let's build a life you will love!!
Lemon Chicken with Potatoes and Green Beans
Ingredients
6 tbsp Olive oil
2 lemons 1 thinly sliced, 1 juiced
4 tsp minced garlic
1 tsp kosher salt
1/2 tsp freshly ground black pepper
3/4 lb green beans trimmed
8 small red potatoes quartered
4 boneless skinless chicken breasts
Instructions
Coat a large baking dish with 1 TB of the olive oil. On the bottom of your dish, arrange lemon slices in a single layer.
Combine the remaining oil, lemon juice, garlic, salt, and pepper In a large bowl. One by one, you will need to coat the green beans, potatoes and chicken in the oil mixture. Start by adding the green beans first. Toss to coat. Then, using tongs, remove the green beans and place them on top of the lemon slices. Next, add the potatoes to the olive-oil mixture and toss to coat. Using your tongs again, arrange the potatoes over the green beans, along the inside edge of the dish. Last, coat the chicken in the oil mixture and place in your dish. Pour any remaining olive-oil mixture over the chicken.
Cook at 350 for 1 hour - 1 hour and 15 minutes (or until potatoes and veggies look soft and chicken cooked through). Serve warm.
