As the weather starts to warm up and we have more opportunity to be outdoors, one of my favorite outdoor activities is grilling. Well where I live I grill year round even in the rain, the food just tastes so much better. The power of the sun and the outdoors does wonders for our brains, and another good brain food is fish, salmon in particular. A great source of omega-3s (helps with cardio health) great source of protein, high in B vitamins, and antioxidants. Keeping our bodies healthy, helping the blood flow to our brains, much of what our body crave while becoming more active and spending more time outdoors. So do yourself a favor and try this recipe, a delicious way to nourish your body and in turn savor your soul.
1 lb fresh caught salmon fillet
2-3 tbsp olive oil
3 cloves garlic
1 tbsp fresh dill or 1 tsp dried dill
Juice of 1 lemon
1 cup baby heirloom tomatoes cut in half or regular grape tomatoes
(heirloom tomatoes are just so colorful)
Directions:
Line a piece of foil with parchment paper, make sure it is big enough to wrap the salmon in.
In a small bowl stir together the olive oil, garlic, dill and lemon.
Lay the salmon in the parchment lined foil, lay the tomatoes on top of the salmon and pour the olive oil mixture on top.
Wrap the salmon up and place on a preheated grill at medium high and cook salmon until it flakes off with a fork, be sure center is done as well.
