Simply Done

One of the most important things I want to teach my clients is that cooking and food prep can be simple. Meals do not need to be 7 courses with dishes consisting of 20 ingredients. Choose what you like and create ways to put them together. Keep it SIMPLE!! Entertaining is the same, choose your main course have your salad or side vegetable with a potato or bread or rice. The important thing is that you get your protein, vegetables and fats, the rest is easy. This goes for breakfast, lunch and dinner. Go to the store and stock up on all of your favorites, as long as the food is handy mealtime is easy. If you have oatmeal in the cupboard and fruits you like there is breakfast or lunch. Vegetables can go into your eggs, fruit can go in your salad, proteins can go with anything. Roast, grill, saute, toast, bake...add your favorite seasoning and the meal is done. Keep it fresh, stay away from things that are boxed or packaged, they can be more work anyway. Make it from scratch, there are so many recipes out there that are simple with few ingredients involved. With this blog I am sharing a really simple filling breakfast, three ingredients made in one pan. I will share some holiday treats this next month so keep checking. Savor the simplicity of food prep.

Eggs with Quinoa and Spinach

2 eggs

1 handful spinach

1/2 cup cooked quinoa

salt and pepper to taste

1/4 to 1/2 cup up avocado optional


Prepare small skillet. Preheat pan to medium high

Whisk and season eggs with the salt and pepper, I like a little spice so I add a couple of shakes of chalula.

Pour eggs into skillet, as the eggs start to cook place 1/2 cup quinoa and handful of spinach on top, continue cooking until eggs are done and spinach has wilted some.

Transfer to a plate and top with avocado.

You can add any seasoning you like, add salsa, seeds...

Breakfast is done, see how simple that was?!
