Have you noticed in this day and age how everything seems to be big, and loud, dream big, walk big, exercise big, eat big, embrace big, big big big!!! Well sometimes big just doesn't work for everyone, and that's okay. We all have our own individual unique personalities, and we just can't jump on the big band wagon, even as much as we may try it just doesn't work. This leads to being discouraged, feeling defeat and sometimes just throwing in the towel.
Small can work in our lives just as well, the most important thing is the forward movement whether big or small. Small positive changes in the right direction will still get you where you want to go, small steps you take toward goals you have set will still help you attain those goals.
This is also true when it comes to the food you eat and how you eat it. Small servings might work best, or a lot of small sides can make a meal, or small meals throughout the day might be what sounds good to you. Small can work when making changes to your diet, a little more vegetables, and little less sugar, a little more fresh fruit, a little less dairy...see how that works?? The most important thing to remember in this is that it needs to work for you, this is the part of connecting with yourself and figuring out what will work, what does work and how best to make it work. Small, medium or big, design the lifestyle unique to you.
Sun-dried Tomato Pate
Ingredients:
1 yellow onion diced
2 tbsp olive oil
4 cloves garlic, minced
1 cup oil packed sun-dried tomatoes
1 15 oz can white beans, rinsed and drained
Juice of 1 lemon
2 bunches fresh basil
salt and pepper to taste
Directions:
Heat the oil in a medium skillet, add the onion until translucent, add garlic and continue to saute until fragrant.
Combine onion, garlic, white beans, lemon, basil in a food processor and process until beans are pureed. Scrape down sides as needed. Salt and pepper to taste.
