Many of us find ourselves defined by our thoughts, words and actions! If you can live with this definition of yourself, that is a great place to be, you are ahead of most of us. If you find yourself having a hard time accepting this definition of yourself, it is never too late to make changes in how you think, what you say and how you act (or don't act). How you see yourself matters most, and many times we are not present enough with ourselves to pay attention. We react, respond, imitate, make choices and live based on what is going on around us.
True health, in its most authentic form, comes from what's inside. Not only how we eat, but, in our behavior with ourselves and those around us. To nurture ones self is to love ones self in every way, how you look, how you behave, what you say and how you feel. Taking pride and ownership for who your are as a person, giving yourself the best parts of you. Doing this means being in touch with what that is and what it all that means to you and the life you are living.
You can start with what you eat, how you eat, when you eat, and understanding your choices, but is goes much deeper than that. Making healthy changes to your world needs to be something you can live with, something that makes sense to you. You need to truly understand why you are making these changes, how your life can benefit from these changes, and how to make them part of your day to day choices. Healthy habits, that after a while, you don't even have to think about, they are just part of who you are. Aside from food, your thoughts and behavior need to be healthy as well, being positive, being genuinely happy, not allowing others to dictate your self worth or being influenced by those around you. Spend time with those that lift you up, support you, make you happy and love you for who you are not who they want you to be.
As remove into the final days of this year, take a look at where you are and what this year has brought you, taught you and left you with. Enjoy the celebrations of life, feel blessed that you are alive and finish this year being connected to life and all that you can make it. Start the journey to the core of who you are, and make the definition of self what you want it to be and what truly resonates with you.
Spicy Blended Tortilla Soup
Ingredients:
4 corn tortillas1
1 yellow onion (peeled and diced)
1 jalapeno (seeded and diced)
2 tbsp Mexican spice blend
Juice of 1 lime
2- 28 oz cans unsalted diced tomatoes
¼ cup chopped cilantro
1 15 oz can black beans, drained and rinsed
1 avocado diced
Mexican spice blend- Combine all the seasonings and store in an airtight container.
1 tbsp chili powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp dried oregano
½ tsp paprika
1 ½ tsp ground cumin
1 tsp salt
1 tsp black pepper
Directions:
Cook tortillas in oven at 350 for about 10 minutes flipping halfway through, remove when they crisp up a bit like. Break into bite size pieces.
In a large soup pot over high heat, add onions, jalapeno, Mexican spice (I have one you can make yourself if you don’t want to shop for it), add some water or tablespoon olive oil to avoid burning, cook until fragrant and onion starts to soften. Add diced tomatoes and 2 cups water, bring to a boil, reduce heat and simmer for 15 -20 minutes. Put cooked tortillas in the soup pot, let cool a bit.
Place soup into a blender and puree. Add lemon juice, cilantro and black beans serve with homemade chips on top, you can also add chicken you choose.
