Tough!

Tough, a word I choose to use instead of hard. TOUGH, is something we can all get through, HARD, seems as if something is blocking our way, something we cannot get through, something that seems impossible. Most things in life that we deem hard are really only tough moments that we can find a way through, maybe we need to be tough in order to get through, but we don't ever want to be hard. Hard actions, hard personality, hard words, Hard will not get you to where you want to go, but tough will.


Work can be tough at times, but never hard, workouts can be tough, but never hard, eating healthy can be tough, but never hard. Do you see what I mean? Hard just sounds as if you are defeated, can't accomplish something, giving up your power to the HARD situation or circumstance. We can all muscle through tough, but we stop when things seem too hard. Life is never too hard, if something is tougher than you thought, choose a different direction, or another way of doing it. Don't ever give up, don't ever stop moving forward, don't ever sacrifice who you are for the cause. You can get through anything you choose to, anything that is important enough in your world.


Ask for help whenever you run out of ideas, there are so many people out there that have been in your situation, people, friends loved ones that would be so happy to step in and offer some assistance. So many options for you when things get TOUGH, resources at your fingertips, literally! So take HARD out of your vocabulary and replace it with TOUGH, we can all get through tough!!

Mexican Crunch Wrap


Ingredients:

1 lb ground turkey

2 cups cabbage

2 tbsp taco seasoning (I made my own)*

1 tbsp salsa

1 can black beans, drained and rinsed

2 handfuls of crushed tortilla chips

Large flour tortillas


Queso cheese (recipe to follow)** or regular cheese if you eat dairy. This can also be made without any cheese.


Directions:


*taco seasoning-

1 tbsp chili powder

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp dried oregano

½ tsp paprika

1 ½ tsp ground cumin

1 tsp salt

1 tsp pepper

Combine all the ingredients, mix well and store in a sealed container. I usually double or triple the recipe so I have it on hand


**Queso Cheese


Ingredients:

1 cup cashews

½ cup water

1 can diced green chiles

1 tsp taco seasoning


Put ingredients into a food processor and blend until smooth


Heat a skillet to medium high, brown the ground turkey in a little olive oil, add the 2 tbsp of the taco seasoning and cook for about 5 minutes. Put the cabbage in the skillet and cook until the cabbage is soft.

Add the black beans, and stir to combine.

To assemble, lay the flour tortilla out flat, place about two to three heaping tablespoons of the turkey cabbage mix in the center of the tortilla. Crumble the tortillas chips on top then the cheese. Fold all four sides over the center to cover.

Heat about 1 tablespoon of olive oil in a skillet, place the folded side of the wrap on the bottom first, cook until golden brown, then flip it over to the other side. Cook this side the same, until nice and golden and crunchy.

Remove from the skillet and add any garnish you like, salsa, avocado, guacamole...
