Transition

Transition~ The process or period of changing from one state or condition to the another. Notice the transition, feel the transition, be a part of the transition!!! From day to day, season to season, year to year, so many transitions going on in our lives. To notice them and be a part of them helps you appreciate the beauty of them, yes BEAUTY!! Transitions bring change, introduces new to us, appreciating the beauty in this world of ours, what surrounds us and makes us whole. Noticing, the fact of observing or paying attention to something.


As we are approaching the middle of April, feeling the transition of time going by, maybe faster or slower than we would like, unable to control the speed at which it moves. But, here we are living it, transitioning with what comes and goes, what is and what isn't, moving forward through life. Maybe breaking the year down to quarters, not like businesses do but our seasonal quarters. Transitioning into each season and living in that quarter, being in spring and all that it is. Enjoying the days within this quarter making the most of it. Now here is how it can be a little like a business, each quarter in the business world we try to make the most and accomplish the most during that time. Let's do the same with this spring quarter/season, not working through it but experiencing it making the most of it, seeing what we can personally accomplish, each season!!


Mother Earth moves through each season as she will. The memory of creation is stored within the ground you walk on. Still your mind, relax, close your eyes and feel the timeless healing energy of our Mother Earth. There is one love, one breath flowing and evolving through you and this beautiful planet. Touch her, think of her, feel her all around you and know she is inside your heart. With each transition we encounter the process of self discovery deepens and strengthens your spiritual connection to life, earth and the universe. Move through these transitions with grace and awareness, maybe seeing things for the first time, you may notice all the miraculous things we so often take for granted. When we transition not just with our eyes and our minds but with our hearts.


Black Pepper Chicken


Ingredients:

1 lb boneless skinless chicken, breasts to thighs, thinly sliced

2 tbsp corn starch

1 tsp turmeric

1 tbsp fresh grated ginger

1 shallot sliced or chopped

2 tsp black pepper

3 tbsp sesame oil or extra virgin olive oil

3 tbsp honey

3 tbsp tamari

1 1/2 tbsp rice vinegar

1/2 tsp crushed red pepper flakes

cut up veggies of choice, about 3 cups. Or you can just choose one it you prefer.


Directions:

Using a medium bowl, toss together the chicken, cornstarch, turmeric, ginger, black pepper and 1 tbsp oil.

In a glass jar, combine the honey, tamari, rice vinegar, red pepper flakes and 3 tbsp water.

Heat 2 tbsp oil in a large skillet over medium heat, add the chicken and brown, about 5 minutes. Add the vegetables, including the shallot, and cook another 3 minutes, until the broccoli charrs a bit. Pour in the honey tamari mix. Bring the sauce to boil and cook until the chicken is coated, about 5 more minutes.

You can serve this with rice or rice noodles.



Black Pepper Chicken
